Tomato and Basil Pasta Salad

Ingredients :

  • 2 cups cherry tomatoes, halved
  • 2 medium cucumbers, peeled, seeded and chopped
  • 1 broccoli top, cut into bite-size pieces
  • 1 medium red onion, thinly sliced
  • 3 yellow squashes, blanched and sliced (or 2 small zucchini, chopped)
  • 1 cup fresh basil, torn
  • 1 pound penne pasta, cooked according to package directions
  • 1/4 cup canola oil
  • 1/4 cup good red wine vinegar
  • Salt and pepper to taste

Preparation :
Toss all the ingredients with the pasta. Refrigerate 1 to 2 hours before serving.
Yield: 8 servings
